Not only was the lard used in cooking, it was needed to season the cookware. Dutch ovens are great for soups, stews and various cajun recipes. In recent years they have become popular for camp cooking over charcoal. At times the dutch ovens are stacked, using each for a different meal course. Turkey fryers are used during holidays in place of baked turkey. Fish fryers are a year round favorite. Jambalaya is cooked over a gas burner in a large pot. Good home cooking is best when done in appropriate utensils.
